I attended a great class on canning at the Iowa State Extension office. It was an informative talk and gave me some great resources. Check out the website

It has great info on food preservation of all types. They are looking at offering a course specifically on food prep at the Iowa State Extenstion office. This website is for the National Center for Home Food Preservation. There are videos you can watch and suggested reading.
